Summer Truffle Gnocchi Recipes

Are you new to truffle flavour? Get the chance to try it with soft potato gnocchi tossed in a light Parmesan cheese and butter sauce, finished with the delicate Fresh Black Summer Truffle flavour. This is a timeless dish, delicate prepared for the season — simple, refined and full of flavour.

Truffles elevate the simplest dish, so no need to complicate life – just a simple recipe to make your summer lunch truly special!

Ingredients for 2 people:

  • 400g potato gnocchi

  • 80g grated Parmesan cheese

  • 60g organic butter

  • 20/24g fresh Black Summer Truffle

Prepare the gnocchi: In a pan, bring water to boil.

  1. Melt the butter: While waiting for the water to boil, place a saucepan over low heat and melt the butter. Be careful not to let it brown or fry. You can remove it from the heat while waiting for the gnocchi to cook.

  2. Cook the gnocchi: Once the water is boiling, add the gnocchi and cook for a few minutes until they start floating to the surface.

  3. Make the sauce: Return the saucepan with the butter to medium heat. Add the drained gnocchi and a ladle of the reserved cooking water to create a creamy emulsion.

  4. Incorporate the cheese: Remove from the heat and stir in the Parmesan cheese. Mix everything together well. If needed, add more cooking water to maintain a creamy consistency.

  5. Finish with truffle: Just before serving, shave the Black Summer Truffle over the gnocchi for a magical finishing touch.

Tips:
